Hello, friends! I feel like it’s been lightyears since I shared a recipe with you and I’m extra excited about today’s. Not only because coconut peanut butter oatmeal cookies, but I’m teaming up with some beautiful ladies to bring you 6 nutty delicious peanut butter recipes.
I think I was destined for a peanut butter obsessed life… My birthday is “Peanut Butter Lovers Day” and when I was just a wee embryo, my mom’s pregnancy craving was always peanuts. I didn’t choose the peanut butter life, it chose me.
Although, I will admit, after discovering the plethora of other nut butters that exist, peanut butter is rarely my first choice. I’d much rather a spoonful of cashew butter or a drizzle of almond butter. But peanut butter and chocolate… Girl, I’m all for that classic combo. Plus peanut butter also win in the budget-friendly category being 90% cheaper than the other luscious nut butters I crave.
For the virtual peanut butter party – I made these chocolate chunk coconut peanut butter oatmeal cookies. Ooph quite the mouthful – but so worthy. Chocolate, peanut butter, and oats are basically my top 3 food groups. All together they make magic especially with a sweet touch of coconut.
These chocolate chunk peanut butter oatmeal cookies were born from a severe craving for a nice thick oatmeal cookie. I don’t remember eating many oatmeal cookies in my lifetime, but I like needed an oatmeal cookie. These seriously hearty cookies hit the spot. They have a nice crispy edges with softer, chewier centres. I actually used peanut flour mixed with maple syrup for these and really love how they turned out! The batch disappeared very quickly… They’re filling enough to be a nice on the go snack, but sweet enough for dessert as well. They go perfectly with a steaming mug of coffee or nice cold cup of almond milk.
Also – I photographed these cookies while my roommates were around. The ice has been broken. They know that me standing on chairs, whipping out props I brought with me in my suitcase, and withholding food until after photographing for 15-30 minutes is my life.

- ¼ cup peanut flour
- ¼ cup maple syrup
- ½ cup oat flour
- ¼ cup oats
- 2 tbsp coconut
- ½ tsp baking powder
- ⅛ tsp baking soda
- 1 tbsp almond milk
- Chocolate chunks - I chopped up a few squares of dark chocolate
- Heat oven to 350F. Line a baking tray with parchment paper and set aside.
- In a medium sized bowl, combine the peanut flour and maple syrup. Mix until smooth.
- Add the rest of the ingredients EXCEPT for the chocolate. Mix to combine. If it seems overly wet and stick, add in another tablespoon of oat flour. It should be a tacky dough consistency.
- Fold in the chocolate chunks.
- Divide into 6 balls. Place on baking tray and flatten each into a disc.
- Bake for 8-10 minutes. The edges will begin to golden.
- Let cool for a few minutes before enjoying!
