It seems April is off to a cookie start… Maybe I should roll with it and do a month of cookies, I don’t doubt that I’d be able to do it. Cookies are kind of my favourite as I’m sure you’ve noticed.
Usually I am all for the crispy cookies, but pillow cookies have earned a spot in my heart. They’re sort of like cookie muffin top hybrids, they’re sink-your-teeth-in thick and just awesome.
Since I have definitely talked enough about how much I love cookies on the blog I decided to look up random facts about them to share instead.
World’s largest cookie was 102 feet wide and weighed over 40,000 pounds! That’s my kind of cookie.
The first chocolate chip cookie was created by accident in 1930. The creator of the cookie was paid for her recipe with a lifetime supply of chocolate from Nestle.
Oreos are the best selling cookies.
The cookies that Cookie Monster eats on TV are actually painted rice cakes. Apparently cookies would get him too greasy.

Okay, now that you know more about cookies. Let’s talk about these bad boys.
I had a really hard time naming these. Their original name was ‘Chocolate and Date Chunk Peanut Butter Banana Pillow Cookies’, but that just sounds ridiculous. Thankfully, my mum is a little more clever than I am and suggested chunky monkey pillow cookies, which fits pretty perfectly.
These have a peanut butter-y banana base and they are stuffed with chunks of dark chocolate and dates. Basically all the best things in life rolled into a cookie! The chocolate and the medjool dates get all gooey inside the warm baked cookie and together almost taste like caramel and chocolate. It’s a beautiful thing.
Oh! Oh! Oh! And they’re naturally sweetened! No sugar or sweetener of any kind needed in these lovely pillow cookies. The bananas and dates give ’em the perfect amount of sweetness.
These cookies are thick and soft, when they come out of the oven they have a crispier outside, but soften as they sit. Crisp or not, these are fabulous cookies.
Making them even more awesome, they’re really easy to make – you can just chuck all the ingredients in a bowl, mix, form, bake, and eat. Then eat some more.
Maybe some more a couple hours later.

- ½ cup mashed banana
- 2 tbsp coconut oil
- 1 cup oat flour*
- ¼ cup peanut flour
- 1 tsp chia seeds
- ¼ tsp baking soda
- ½ tsp vanilla extract
- a handful chopped dark chocolate
- 2 medjool dates, chopped
- Preheat oven to 375F.
- In a medium sized bowl melt the coconut oil in the microwave or on stove top.
- Add the rest of the ingredients except for the chocolate and dates. Mix until combined.
- Gently fold in the chocolate and date chunks.
- Line a baking tray with parchment paper. Split cookie dough into 8-10 balls and place on baking tray with space between them because they will spread a little.
- Lightly press down on the tops to flatten slightly.
- Bake for 10-12 minutes or until firm to the touch.
- Remove from oven and let cool a couple minutes.
