One of my intentions for this new year is to follow my bliss more often. To chase that feeling of peaceful happy wholeness and fully embrace it.
So this first post of 2017 couldn’t be a better fit. Today we’re talking about the beautiful sunbeam, Ashley Melillo, and her incredible new cookbook Blissful Basil! Plus you can win a copy for your sweet self down below.
I’ve been following Ashley’s blog for ages, always excited to see what deliciousness she whips up and her stunning photos that constantly serve as photo-spiration, as well as to read her lovely written posts. So when BenBella Books asked if I’d like to join the #honoryourbliss blog tour, I was giddy.
Blissful Basil is so much more than a cookbook. While it is filled with bright vibrant food and easy to follow recipes, it’s also full of inspiring words about mental health. Ashley shares her story of overcoming anxiety with the help a plant-based diet and healthier lifestyle. Full of wise words and serious inspiration. She reminds us of all the incredible benefits that come along with plant-based eating and the importance of healthy habits.
Choosing a recipe to share with you from the book was seriously tough, but of course I ended up with a sweet chocolatey recipe 😉 This Double Chocolate Hazelnut Espresso Smoothie is just as decadent as it sounds, but made with such wholesome ingredients. It’s basically a Nutella and coffee milkshake, what more could you ask for in a smoothie?! This rich creamy smoothie was a perfect afternoon pick me up to keep me going through my sleepy slump. It also gave me enough energy to get my butt to the gym. Super powered smoothie.

The feel of fresh crisp air, the smell of trees or salty ocean, and the sound of birds and leaves crunching – it all just fills me up with good feelings and makes me feel blissful.

Ashley also wants us to share a song that helps us get our bliss on and energized in the kitchen! My blissful song choice is Come On Eileen by Dexys Midnight Runners. This song seriously gets me so hyped and so happy.
- 1 ripe and speckled banana, peeled, sliced, and frozen
- 1 cup unsweetened almond milk
- ½ cup ice
- ¼ cup toasted hazelnuts*
- 2-4 ounces espresso or strong coffee, chilled
- 3-4 medjool dates, pitted and soaked
- 1½ tbsp cacao powder (or cocoa)
- 1 tsp vanilla extract
- ⅛ tsp salt
- 2 tbsp cacao nibs
- Add the frozen banana, almond milk, ice, hazelnuts, espresso, dates, cacao, vanilla, and salt to a blender and blend until smooth and creamy.
- Add the cacao nibs and blend for a few seconds to roughly chop and incorporate into the smoothie.
