It’s Friday and I made us a drink to celebrate!
I’ll take my ginger rhubarb mojito with just booch and no booze, what about you?
I’m actually not that into drinks, like juices and smoothies just aren’t my thing. “So why are you sharing a drink recipe, Leah you weirdo?!” Because this drink came to mind and I needed it in my life. Not want, but need. That’s how this ginger rhubarb mojito came to be.

everyday most days, you made yourself a few meals, showered here and there, which are all amazing feats. Whether or not the week went how you wanted or expected it, you showed up everyday and that’s amazing. You are so amazing, I really hope you know that.
Let’s also cheers to the Universe. The Universe has a crazy way of making things happen and things come together. Trust in the Universe, put out good vibes, and get goodness back. Universe, you go girl.
Speaking of the Universe, do you get notes from it? I’ve been getting these daily emails for well over a year and I’m obsessed with them. I love waking up to the sweet little notes and sometimes they are exactly what I need to hear in that very moment. It always amazes me. Can I share a special one I saved with you?
You needn’t worry. There is time. You have all the time in the world. You preceded time and you will exist beyond it. Age is irrelevant; more meaningless than a number. Forever, Leah, you have FOREVER. There is no dream you now have that you will not manifest. There is no challenge you now face that you will not crush and dispose of. There is no point in spending one more second of your awesome, amazing life, thinking anything to the contrary.

These random all over the place thoughts have been brought to you from blanket burrito-ed Leah in bed, sleepy eyed, sweet almond oil covered face, and salt lamp lit as the rain pitter patters outside and the cool rainy air drifts through my open window.
Bed time thoughts are my favourite. Always so honest and raw. Some of my most special memories happened under the night sky with friends talking about anything and everything.
Oh yeah! I almost forgot that you’re here for a drink! This rhubarb ginger mojito to be exact. It starts with a simple rhubarb juice made by stewing rhubarb in water until super soft, then pressing it through a fine mesh strainer to get all the pretty pink juice from it. Next comes some fresh mint that’s lightly muddled to get the most of the flavour, then a generous amount of ginger kombucha and a little squeeze of lime and ice to finish it off!
I used Rise Kombucha because it’s one of my favourites and just happened to be on sale. GT Synergy also has a Gingerade flavour, which would be just as delicious. A berry kombucha would be A+ too, if you’re not into ginger!
When life gives you rhubarb, make all the mojitos (aaaaand some blubarb crumble bars)!
- 1 cup chopped rhubarb
- ¾ - 1 cup water
- handful of fresh mint
- 1 bottle ginger kombucha
- ½ of a small lime
- ice cubes
- Place chopped rhubarb in a small pot along with enough water to cover the rhubarb.
- Bring to a boil over med-high heat.
- Cook until rhubarb is so soft it's falling apart then remove from heat.
- Using a fine mesh strainer, strain the rhubarb mixture, pressing the rhubarb with the back of a spoon to get as much juice out as possible.
- Place it in the fridge to cool.
- Once cooled, prepare the drinks by dividing the rhubarb juice between two (or three small) glasses. Add mint and lightly muddle with a spoon. Pour in the ginger kombucha. Squeeze a bit of lime in and finish it off with a handful of ice cubes.
