I can’t believe I’m saying this…
…but I started getting sick of oatmeal.
I changed it up for a couple days and then craved oatmeal again, but it made me realize I need some more breakfasts in my repertoire. The Recipe Redux theme for February was perfect for this dilemma of mine: Break Out of Breakfast Boredom.
This sweet breakfast stuffed sweet potato made its way into my heart very quickly. It’s now on regular breakfast rotation. It’s so comforting, filling, and versatile.
So since I moved, I’ve been struggling to stick with a morning routine. I know that having a morning routine makes the day just all around better and really impacts me in the best way, but I’ve been staying up later, sleeping a bit later, and just end up rolling out of bed, checking my phone, and making breakfast. I love morning me time and these past few days I’ve been working on it.
My ideal mornings now start with me rolling out of bed, chugging water, and then rolling on to my yoga mat for a quick workout video followed by some yoga and meditation. It’s good for my body and my mind and it’s such a positive way to start the day. I don’t let myself touch my phone before that either because I feel strongly against being on my phone first thing in the morning. After I finish all that, it’s breakfast time. Aka the best time.
I sort of feel like people who aren’t into food blogs or part of the foodie IG community will find this recipe really strange. Sometimes I forget that not everyone is. But I promise you it’s not that weird. Sweet potatoes are so sweet that they’re a perfect vessel for fruit, granola, and nut butter. Don’t underestimate the deliciousness of this combo! Definitely worth trying.
This sweet breakfast stuffed sweet potato is a great way to break out of a breakfast rut. It’s also extremely versatile. I chose to stuff it with banana coins, blueberries, maple tahini, and granola and it was an A+ combo that I highly recommend. Some other add-ins that I’d recommend:
- warmed up frozen berries
- crunchy peanut butter
- chopped medjool dates
- protein bar chunks
- chocolate drizzle
- mini chocolate chips

- 1 baked sweet potato*
- 1 banana, sliced into coins
- handful of blueberries
- handful of granola
- 1 tbsp tahini
- 1 tsp maple syrup
- 1-2 tsp water
- First, make the maple tahini by mixing together the tahini, maple syrup, and water. Keep adding water until it reaches desired drizzle consistency.
- Warm up your sweet potato and cut down the middle.
- Fill with banana and blueberries. Drizzle with maple tahini. Sprinkle with granola.
