Overnight oats are something I often crave in the mornings, but never think to make the night before. Or I do think of it, but just can’t bring myself to commit to them. It’s a real struggle. But every time I do end up making them, I wake up excited to eat them and enjoy every bite. So it’s about time I share with you my favourite vanilla bean overnight oats!
I needed to fancy them up a bit for you, so I added juicy roasted strawberries because roasted fruit ❤️ (see roasted nectarine smoothie, roasted blueberry cream, and roasted banana bread for more examples of my roasted fruit love).

These vanilla bean overnight oats with roasted strawberries definitely fall under simple healthy recipes! All you have to do is mix oats, chia seeds, vanilla bean, and almond milk together and let it sit in the fridge overnight. Then in the morning, mix in a bit more almond milk for optimal creaminess, and roast up the strawberries for on top. I actually didn’t even sweeten these overnight oats because the vanilla bean powder I use gives them so much flavour and vanilla-y sweetness, but if you’d like them a little sweeter mix in some stevia, maple syrup, or mashed banana!
And to make it even less work, you don’t even have to roast the strawberries.
But I’ll judge you a little bit because roasted strawberries are amazing. Plus spring strawberries aren’t as sweet or flavourful because they’re just coming into season, so roasting them brings out their flavour and sweetness. It’s also super easy because you just slice them in half, throw them on a pan, and bake for 12-15 minutes or until they’re all juicy and soft.
Then you put those warm sweet strawberries on top of your cold overnight oats and dig in to a beautiful filling breakfast. Overnight oats are also delicious warmed up because they’re so creamy.
The hardest part about this recipe is remembering to make them the night before, but they make mornings a breeze so you have a few more minutes to yoga, journal, stay in the hot shower, or roll around in bed.

- a heaping ½ cup of rolled oats
- 2 tsp chia seeds
- ½ tsp vanilla bean powder
- 1¼ cup almond milk (or non dairy milk of choice), divided
- 5-7 strawberries
- optional: sweetener of choice, granola, other fruits for topping
- Combine oats, chia seeds, vanilla bean powder, and 1 cup almond milk in a jar or bowl and mix.
- Cover and let sit in the fridge overnight.
- In the morning, heat oven to 425F. Cut strawberries in half and lay face down on a parchment paper lined baking tray.
- Bake for 12-15 minutes or until soft and juicy.
- Remove oats from fridge, mix in the extra almond milk if needed, top with strawberries and other desired toppings, and enjoy!
